Sometimes called ‘The Gold of the Incas’ it has been grown in the Andean Mountains by the Incas since 3000BC. It is rapidly growing in popularity in the present time for its nutritional and medicinal properties and tastes great as well! Quinoa contains all nine essential amino acids making it a complete protein and a perfect substitute for meat if you are vegetarian. It also contains high amounts of magnesium good for migraine headaches and lysine for tissue repair tissue and growth. The hull or pericarp contains saponin which is toxic so it must be removed before consumption by abrasion or washing. Incan armies could eat a mixture of quinoa and fat known as "war balls" and be sustained while marching for days.
