We toast them in a little olive oil where they pop like tiny popcorn. The toasted grain has an excellent nutty flavor and is great in stir frys. Grain Amaranth is reportedly higher in protein than wheat, rice and corn as well as unusually high in lysine, an essential amino acid. Seed Germinating Tips: Plant outdoors in spring after danger of frost, or indoors 6 weeks before last frost. Barely cover with fine soil, pressing firmly. Be sure to keep moist or cover with clear plastic to retain moisture.
