After a lifetime in the food industry, it's always a thrill to add a new flavor to the spice cupboard. This year we fell in love with Sumac, the tart little berry that grows on the Rhus coriaria bush which is native to Turkey.
If you've ever gotten shawarma from a street cart, chances are you have tasted this tangy and delicious flavor blended with cumin and oregano in a creamy dressing. It's one of the most delicious flavors on earth and I've always wanted a jar of that dressing to take home!
After some trial and error we have narrowed down the flavors and come up with delicious recipe that with bring the street cart flavor right to your kitchen.
Sumac Dressing Recipe
1/2 cup mayo
1/2 cup yogurt
1/2 cup whole milk
2 Tbsp parmesan
1/4 cup feta
2 Tbsp sugar
1 tsp sumac
1 tsp garlic salt
1 lemon, zest and juice
Fresh ground pepper
1 sprig fresh mint, minced
Whisk ingredients together and adjust for flavor. Drizzle over grilled chicken, halloumi, cucumber and tomato salad, or drink it straight from the bowl!
Sumac Spiced Chicken
Sprinkle this blend of spices over your chicken for a delicious warm flavor!
1 tsp sumac
1 tsp whole coriander seed
1/2 tsp cumin
1 tsp smoked salt
1 tsp oregano
1/2 tsp pepper
1 tsp garlic granules
Rub chicken thoroughly with the spice blend, then brown in oil in skillet. Meanwhile, mix the juice and zest of lemon, 1 clove garlic, pressed, and 1/4 cup olive oil in a baking dish with a cover.
When the chicken has browned, transfer it to the baking dish and stir to coat.
Cover and bake until the internal temperature reaches 165°F, then rest 5 minutes before serving with Sumac Dressing over lettuce with a side of kalamata, tomato and caper salsa.
